New Recipes

Next week appears to be relatively free for us, so I may actually be able to cook a few meals rather than the one or two I've been managing to get together (like this week).

Sunday Grilled pork chop, three cheese spaghetti pie (NR) and salad with raspberries. The spaghetti pie was delicious and I think it tasted even better the reheated. The only thing I would change is to add more tomatoes because I loved how sweet cherry tomatoes get when cooked. Really good and would be a good option for entertaining.

Yesterday morning I made this rhubarb upside down cake (NR) from the latest Martha Stewart Living. I flagged the recipe knowing I wanted to share it with my mother-in-law, but when I saw rhubarb at the store on Sunday I knew I had to make it.

SO, SO, SO GOOD. Very light and the crunchy topping on the bottom (the cake gets inverted) was very unexpected. I used a lemon for juice and zest instead of orange and I think it came out great.
