What I Made This Week

Hmmm...again not much. We had a bunch of leftovers and unexpected plans on Monday night.

Sunday Pork loin roast in the crockpot with potatoes, carrots and lipton soup mix. I just love that recipe. Salad and biscuits.
Tuesday Swedish meatballs and egg noodles, roasted Brussels sprouts (NR)
Thursday Chicken scampi with buttered orzo and salad
Friday Salmon on some type, kale and salad

I did make up another batch of these ham sandwiches. I freeze the whole bag of them and they are nice to have around for a quick meal or part of a dinner.

Baking
We started this week in possession of eight (8!) boxes of Girl Scout cookies, so I opted not to make something sweet this week. My new recipe was biscuits from the Mad Hungry cookbook. Yummy! And I froze eight of the uncooked for another meal.
