This week has been me, Micky, books and repeat meals. A RAGBRAI widow this week, I've been doing some, but not much, cooking. I was especially intent on getting rid of leftovers.
Saturday-I made the bicycling boys a breakfast hash with baby Yukon gold potatoes, ham, cheese and green onions. Homemade pizza for myself that night.
Sunday-8 to 5 sandwich, found on Design Mom's site, was my new recipe. Take a baguette, slice in half. Slather one side with mashed up avocado and the other with cream cheese. Add lettuce and bacon, enjoy. Had with a side of Rainier cherries and International House Hunters.
Monday-Weds-I switched between leftover pizza, another 8 to 5 sandwich and sourdough toast with creamy natural peanut butter.
Thursday-Pasta with Bacon and Peas. I've made this recipe twice before and every time its not quite right, Either I'm making do with the ingredients or the shallots get burned. No matter, I'm retiring the recipe because it just doesn't seem to work for me.
Baking-This morning I made oatmeal chocolate chip cookies (NR), which calls for a curious ingredient: vanilla pudding. Just the dry pudding. I'll be interested to see how they turn out.
