Food

Last weekend, my brother sent us home with four cucumbers from his garden. When it rains, it pours cucumbers, right? I share one with Anthony's brother and have been working on the other three.

Sunday-Grilled cheese (or grilled ham + cheese for some), fruit and cucumbers sprinkled with Jane's Crazy Salt and dipped in a mixture of sour cream, mayo and more Jane's Crazy Salt.

Monday-Creamy Chicken and Pasta Salad on red leaf lettuce (NR). I found this recipe to be so severely lacking in flavor, I actually took the time to write a review on the site. Points for using Greek yogurt with its high protein creaminess, but blah flavor. We had something else with it, but I'm blanking right now.

Wednesday-Chicken scampi and cantaloupe wrapped in prosciutto

I also made day pickles with one of the cucumbers (slice up cucumber, add white vinegar, dill and kosher salt, keep in fridge overnight). Plus, I enjoyed some sincerely delicious avocados. One mashed up with mayo + honey turkey in a pita pocket, the other mashed on sourdough toast (YUM!).

Baking-This a.m. I made Zucchini Cake with Crunchy Lemon Glaze. Good use of zucchini and calls for olive oil instead of butter.
